Special birthday post

Monday was a very special someones birthday- my mom. Besides my husband, I consider my mom to be my best friend! My mom and I have a very special bond and a great friendship! Although this is a late post, I want to re-wish my momma a very happy birthday!!

Here's a quick recap of how we celebrated.....

We started out by going to one of our favorite restaurants for din din.

We indulged in one of these bad boys! I LOVE Margaritas!!! 

I surprised her by making one of her favorite cakes, a spice cake with buttercream frosting.
Then I made this cute little collage for her, thanks goodness for picture apps!

Sweet Treat

Here's an uber easy, delish recipe that I want to remember! Since I love cooking and baking so much, I feel the need to share the recipe(s) that I come across & that I love, this happens to be one of them...... 

I was first introduced to this recipe by my girlfriend from work while I was still in college. I had invited her and her man over to my place for a dinner date and had asked her to bring desert. Well, she brought desert all right! Ever since then, I've been making this delightful sweet treat. It's super easy and only requires 3 ingredients! 

Peanut Butter & Chocolate Chip Rolls

Ingredients:
1 tube of crescent rolls
peanut butter (as little or as much as you'd like)
chocolate chips (I use semi-sweet, but use whatever suits your fancy)

Yep, that's it!
Method:
Preheat oven to 375F
Separate and unroll the crescent rolls
Spread a layer of peanut butter over the roll; top with chocolate chips
Roll from the bottom of the triangle to the point


They should look like this.

Place rolled crescents on  sprayed cookie sheet for 10ish minutes, or until golden
Remove from oven and serve warm. 

Finished product.

Takin' it back to May 2013

I'm taking you all the way back to May 2013 folks! Enjoy this recap of pretty much the most hectic, stressful, yet exciting points in my life! 

Be prepared for quite a long story........!

Imagine your last semester of college, EVER-working extra long hours on ID projects (until the wee hours of 2, 3, 4, 5, 6am) then turning around and waking up just to be in class for your presentation at 8; preparing everything for your BFA Senior Project Exhibition; working 20 hours a week at your J-O-B plus additional hours for the job helping host huge events; worrying about not having all the requirements to graduate on time because of curriculum changes for your major; packing up your entire apartment preparing to move (we were sleeping on the floor with blankets and sitting on lawn chairs so our butts didn't hurt); preparing for graduation (paperwork, cap/gown rental, etc); and to top off the whole shebang...preparing and confirming last minute things for your wedding which is next month........Yep, that was my May!

As you can see, May was quite an intense month! Luckily though, by the time May had made its way to us I wasn't stressed over the wedding, at all. I was confident that everything was good to go and only minor little details needed to be completed. The thing that was stressing me out was school- not only all of the projects that had due dates approaching, but also trying to figure out whether or not I was really going to graduate on time. Basically, due to program/curriculum changes to the BFA in Interior Design, I was going to have to stay an extra semester to complete the extra courses and I was NOT a happy camper hearing about this BS!! Then after I started to get things figured out with those changes, more changes came my way and I found out that the program was making adjustments yet again! This time I was going to use the changes to my advantage....

There would be WAY too much to talk about with all the exact changes and all of the hoops and BS that I went through so here's a quick breakdown. After speaking with several people in my department and with the help of one very smart and awesome lady at my work, who had some awesome side information and a connection, I ended up talking with the Lead Academic Evaluator who provided me with all the information and precise help that I needed to get everything squared away so that I knew I would be able to graduate on time.

On top of all that stress and anxiety about graduation, I was even more stressed out about finishing out the final semester of my classes and all of the projects and garbage associated with it. See for ID majors, we have a ton of "extras" that we have to do in addition of all the normal major crap (if you are an ID major- you know exactly what I mean). One of these extras require that we finish our entire senior project 2 weeks prior to the due date in order to present and then prepare for the Art Exhibition that our work will be showcased in. At this time, in addition to the senior thesis class, I was taking 2 other studio courses, my last general education class and a portfolio class. That makes it a total of 5 classes + all the other stuff that was going on. Talk about an OVERLOAD!! Boy was I stressed out and definitely a little crazy for taking on so much all at once, but I had to suck it up and it had to be done so I could graduate- so I did. The icing on this cake was definitely the fact that our senior thesis teacher was constantly telling us all how horrible our designs were and threatening to fail us all. 

Needless to say, May was uber cray-cray for me! I was a stressed out, not eating, freaking out, not sleeping, brain dead fool and an utter mess!! But.......... In the end it was all worth it!! I managed to get everything done, have a little time to relax and get excited about graduation. I mean we were both graduating from college with Bachelor's degrees, EXCITING! Our wedding day, less than 1 month away, DOUBLE EXCITING!!

A huge shout out and thank you to my love for all of his help and support during this hectic month and for putting up with my crazy ass! I couldn't have done it without him!

Hi there and Welcome!

I'm so excited to be launching A Slice of Pinch Life and writing my first ever post! EEK!
Well, since this is my very first post it only seems right to me that this post be about this blog, why I started it in the first place, and what's to come. So, here it goes!

*What kind of blog is this?
I consider A Slice of Pinch Life a lifestyle blog where I document, well, my life. See, I believe that life itself is an adventure and I plan to record my adventure-whether it be good, bad, or ugly. Please note- I'm the type of person that tells it EXACTLY like it is and I will speak my mind freely; I'm hoping you do the same with me!

*Why am I blogging?
I started this blog simply because..... I CAN & I WANT TO! ;)
Ultimately though, this blog is a place where I can write and share my life adventures with others in hopes of connecting with others about our similarities/differences. Moreover, I want this blog to be MY place- a space just for me where I can tuck away the memories to recall on down the road and hopefully provide a detailed record of this journey with our future children. 

*What's to come?
Like I said, this blog is about me and my adventure/journey. So- you can expect to hear all about my life!
